Ingredients:

For Batter:

  • 1 cup idli rice (or regular rice)

  • ¼ cup urad dal (split black gram)

  • 2 tbsp poha (flattened rice) – optional, helps with softness

  • ¼ tsp fenugreek seeds (methi)

  • Salt to taste

  • Water (for soaking and grinding)

Toppings (customizable):

  • 1 small onion – finely chopped

  • 1 small tomato – finely chopped

  • 1 green chili – finely chopped

  • Fresh coriander – chopped

  • Grated carrot – optional

  • Curry leaves – chopped (optional)

Other:

  • Oil or ghee – for cooking



🍳 Instructions:

1. Prepare the Batter (can be done ahead):

  • Rinse rice, urad dal, poha, and fenugreek seeds. Soak them together for 4–6 hours.

  • Grind the mixture to a smooth, thick batter using water as needed.

  • Add salt and let it ferment overnight or 8–12 hours in a warm place, until bubbly and slightly risen.

2. Prepare Veggies:

  • Mix all the chopped toppings in a bowl. You can also keep them separate if you want to layer them individually.

3. Make Uttapam:

  • Stir the batter gently. If it's too thick, add a little water – the consistency should be like pancake batter.

  • Heat a non-stick or cast-iron tawa (griddle) on medium heat. Grease it lightly.

  • Pour a ladleful of batter and spread it thick (not too thin like dosa).

  • Sprinkle the chopped veggies on top and gently press them in with a spatula.

  • Drizzle some oil or ghee around the edges and on top.

  • Cook on medium heat until the bottom is golden and crisp (3–5 minutes).

  • Flip carefully and cook the other side for 1–2 minutes (optional, some prefer it one-sided).
