Chicken noodles 

For Marinating the Chicken:

  • 200 grams boneless chicken (cut into strips)

  • ¼ teaspoon pepper powder

  • 1/8 teaspoon salt

  • 1 teaspoon soy sauce (naturally brewed or organic)

  • ½ to 1 teaspoon five-spice powder or garam masala



For the Noodles:
  • 150 grams noodles (your choice of type)

  • 1 teaspoon oil (optional, for boiling)

  • Salt, as needed

  • 1 to 2 teaspoons oil (to coat the noodles after boiling)

For the Stir-Fry:

  • 1 tablespoon oil

  • 1 tablespoon chopped garlic

  • 1 small onion, thinly sliced

  • 1 small carrot, julienned

  • ½ cup bell pepper (capsicum), julienned

  • ½ cup cabbage, shredded

  • 1 to 2 teaspoons soy sauce

  • 1 teaspoon chili sauce (adjust to taste)

  • Salt, as needed

  • Spring onion greens, chopped (for garnish)



📝 Cooking Instructions:
  1. Marinate the Chicken: In a bowl, combine the chicken strips with pepper powder, salt, soy sauce, and five-spice powder or garam masala. Mix well and set aside to marinate while you prepare the other ingredients.

  2. Boil the Noodles: Bring 2 to 2½ liters of water to a boil in a large pot. Add the noodles along with a teaspoon of oil and a pinch of salt. Cook according to the package instructions until al dente. Drain the noodles and rinse them under cold water to stop the cooking process. Toss the drained noodles with 1 to 2 teaspoons of oil to prevent sticking and set aside.

  3. Stir-Fry the Chicken: Heat 1 tablespoon of oil in a wok or large pan over medium heat. Add the marinated chicken and stir-fry until it's cooked through and slightly browned. Remove the chicken from the pan and set aside.

  4. Sauté the Vegetables: In the same pan, add a bit more oil if needed. Add the chopped garlic and sauté for about 30 seconds until fragrant. Add the sliced onion, julienned carrot, bell pepper, and shredded cabbage. Stir-fry the vegetables over high heat for 2 to 3 minutes until they are slightly tender but still crisp.

  5. Combine Everything: Add the cooked noodles to the pan with the vegetables. Pour in the soy sauce and chili sauce. Toss everything together to combine well. Add the cooked chicken back into the pan and stir-fry for another 2 minutes to heat through. Adjust seasoning with salt if necessary.

  6. Garnish and Serve: Sprinkle chopped spring onion greens over the noodles. Serve hot and enjoy your homemade Hakka-style Chicken Noodles!
