 Ingredients

For the Crust:

  • 1 ½ cups crushed biscuits (Digestive or Marie)
  • ¼ cup melted butter
  • 1 tbsp sugar

For the Cheesecake Filling:

  • 2 cups cream cheese (room temperature)
  • ½ cup powdered sugar
  • ½ cup yogurt (hung curd or Greek yogurt)
  • ½ cup heavy cream
  • 1 tbsp cornstarch or all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp cardamom powder
  • 1 tsp rose water (optional)
  • 6-8 Gulab Jamuns (whole or halved)


For Sugar Syrup Drizzle (Optional):
  • ¼ cup reserved Gulab Jamun sugar syrup
  • 2 tbsp water

For Garnishing:

  • Sliced almonds & pistachios
  • Rose petals (optional)
  • Saffron strands (optional)

Instructions

1. Prepare the Crust:

  1. Mix crushed biscuits, sugar, and melted butter until combined.
  2. Press the mixture firmly into a greased 8-inch springform pan.
  3. Chill in the refrigerator for 15-20 minutes.



2. Prepare the Cheesecake Filling:
  1. In a bowl, beat the cream cheese until smooth.
  2. Add powdered sugar, yogurt, and heavy cream. Mix well.
  3. Stir in cornstarch, vanilla extract, cardamom powder, and rose water.
  4. Pour half of the cheesecake batter over the crust.
  5. Place whole or halved Gulab Jamuns evenly on top.
  6. Pour the remaining batter over the Gulab Jamuns, smoothing the surface.

3. Bake the Cheesecake:

  1. Preheat the oven to 160°C (320°F).
  2. Bake in a water bath for 50-60 minutes until the center is slightly wobbly.
  3. Turn off the oven and let the cheesecake cool inside for 1 hour.

4. Chill & Garnish:

  1. Refrigerate for at least 6 hours or overnight for best results.
  2. Drizzle reserved Gulab Jamun syrup over the cheesecake.
  3. Garnish with nuts, rose petals, and saffron strands.
