mutton biryani

 Here are the ingredients for Mutton Biryani:

For Marination:

  • 500g mutton (goat meat), cut into pieces
  • 1 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons mustard oil or ghee
  • 2 green chilies, slit

For Rice Preparation:
  • 2 cups basmati rice (soaked for 30 minutes)
  • 6 cups water
  • 2-3 green cardamoms
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon salt

For Cooking Biryani:
  • 2 tablespoons ghee or oil
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1 tablespoon biryani masala
  • 1 teaspoon cumin seeds
  • 1 teaspoon shahi jeera (caraway seeds)
  • 2 tablespoons mint leaves, chopped
  • 2 tablespoons coriander leaves, chopped
  • 1/2 cup warm milk
  • A pinch of saffron strands (soaked in milk)
  • 1 teaspoon kewra water (optional)
  • 1 teaspoon rose water (optional)
